Planning a backyard get-together and want to wow your guests with some delightful al fresco dishes? Here are some of our faves:
1. Grilled Vegetable Platter
Ingredients:
- 2 zucchinis, sliced
- 1 eggplant, sliced
- 2 red bell peppers, cut into strips
- 1 red onion, sliced into rings
- 8 oz mushrooms, halved
- Olive oil
- Salt and pepper
- Fresh basil for garnish
Instructions:
- Preheat grill to medium-high heat.
- Toss vegetables with olive oil, salt, and pepper.
- Grill vegetables for 5-7 minutes per side or until tender and slightly charred.
- Arrange on a platter and garnish with fresh basil.
2. Caprese Skewers
Ingredients:
- 1 pint cherry tomatoes
- 1 ball fresh mozzarella, cubed
- Fresh basil leaves
- Balsamic glaze
Instructions:
- Thread tomatoes, mozzarella, and basil onto small skewers.
- Drizzle with balsamic glaze just before serving.
3. Watermelon Feta Salad
Ingredients:
- 4 cups watermelon, cubed

- Small corn tortillas
- 1 cup shredded cabbage
- 1/2 cup salsa
- 1/4 cup sour cream
- Fresh cilantro for garnish
Instructions:
- Marinate shrimp with olive oil, lime juice, chili powder, garlic powder, and salt for 15 minutes.
- Grill shrimp for 2-3 minutes per side until pink and cooked through.
- Serve shrimp in tortillas topped with cabbage, salsa, sour cream, and cilantro.
5. Berry Fruit Salad
Ingredients:
- 1 cup strawberries, hulled and halved
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries
- 1 tbsp honey
- 1 tbsp lemon juice

Ingredients:
- 6 ears of corn, husked
- 1/2 cup butter, softened
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- In a small bowl, combine butter, herbs, garlic, salt, and pepper.
- Spread herb butter over corn.
- Grill corn over medium heat for 10-15 minutes, turning occasionally, until tender and lightly charred.
7. Peach and Prosciutto Crostini
Ingredients:
- 1 baguette, sliced
- 3 peaches, sliced
- 4 oz prosciutto
- 1/4 cup ricotta cheese
- Fresh basil leaves
- Balsamic glaze
Instructions:
- Toast baguette slices on the grill until golden.
- Spread ricotta on each slice, top with a peach slice and prosciutto.
- Garnish with basil leaves and a drizzle of balsamic glaze.
