Planning a backyard get-together and want to wow your guests with some delightful al fresco dishes? Here are some of our faves:

1. Grilled Vegetable Platter

Ingredients:

  • 2 zucchinis, sliced
  • 1 eggplant, sliced
  • 2 red bell peppers, cut into strips
  • 1 red onion, sliced into rings
  • 8 oz mushrooms, halved
  • Olive oil
  • Salt and pepper
  • Fresh basil for garnish

Instructions:

  1. Preheat grill to medium-high heat.
  2. Toss vegetables with olive oil, salt, and pepper.
  3. Grill vegetables for 5-7 minutes per side or until tender and slightly charred.
  4. Arrange on a platter and garnish with fresh basil.
2. Caprese Skewers

Ingredients:

  • 1 pint cherry tomatoes
  • 1 ball fresh mozzarella, cubed
  • Fresh basil leaves
  • Balsamic glaze

Instructions:

  1. Thread tomatoes, mozzarella, and basil onto small skewers.
  2. Drizzle with balsamic glaze just before serving.
3. Watermelon Feta Salad

Ingredients:

Instructions:

  1. Marinate shrimp with olive oil, lime juice, chili powder, garlic powder, and salt for 15 minutes.
  2. Grill shrimp for 2-3 minutes per side until pink and cooked through.
  3. Serve shrimp in tortillas topped with cabbage, salsa, sour cream, and cilantro.
5. Berry Fruit Salad

Ingredients:

  • 1 cup strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup raspberries

Ingredients:

  • 6 ears of corn, husked
  • 1/2 cup butter, softened
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, combine butter, herbs, garlic, salt, and pepper.
  2. Spread herb butter over corn.
  3. Grill corn over medium heat for 10-15 minutes, turning occasionally, until tender and lightly charred.
7. Peach and Prosciutto Crostini

Ingredients:

  • 1 baguette, sliced
  • 3 peaches, sliced
  • 4 oz prosciutto
  • 1/4 cup ricotta cheese
  • Fresh basil leaves
  • Balsamic glaze

Instructions:

  1. Toast baguette slices on the grill until golden.
  2. Spread ricotta on each slice, top with a peach slice and prosciutto.
  3. Garnish with basil leaves and a drizzle of balsamic glaze.
